When you are living with insulin resistance, the saying “you are what you eat” has never been more accurate.  As a kid, it isn’t comforting to hear from your doctors or parents that you need to go on “diet”, and it is even harder not to be able to eat what your friends are eating.  There are three building blocks that run and fuel your body: carbohydrates, protein, and fat.  Carbohydrates are plant products such as vegetables, fruits, sugar, and grains.  Fat and protein both come from animal products such as eggs, meat, and dairy.  Fats and protein can also come from fatty vegetables like nuts, olives, and avocados.  Before each is absorbed into your bloodstream, your body breaks down the food into its basic form: carbohydrates are digested as glucose; fats are turned into fatty acids, and proteins are broken down into fatty acids.  Insulin is needed to process each building block, but unlike carbohydrates where a substantial amount of insulin is needed to process the glucose, an unsubstantial amount is needed to process the fatty and amino acids.  Essentially the amount of insulin your body produces and requires depends on the amount of carbohydrates aka sugar you eat.  So with that in mind, I have cultivated some recipes and tips for you to live a healthy lifestyle that are so fun and delicious, you will even forget that sugar ever existed!!
